LOW FAT EGGNOG

Here is an alcohol-free low fat eggnog! Maybe you will like this version!

189 cals | 13 g protein |3 g saturated fat | 221 mg cholesterol

Ingredients (2 servings)

1 ½ cup 1% milk

5 tsp brown sugar

1 tbsp unsweetened cocoa powder

A pinch salt

A pinch ground nutmeg

2 eggs

Few drops of vanilla essence

1 tsp regular sugar

Procedure

  1. In a saucepan, heat milk, cocoa powder and brown sugar on low heat.
  2. Separate the egg white from 1 egg and leave the egg white aside to beat just before serving. Beat egg yolks & egg white from 1 egg till its creamy.
  3. Stir the milk to see if the sugar and cocoa powder have dissolved well. Then add the beaten eggs and mix well for a minute or two on heat. Then turn off the heat. Add a pinch of salt and ground nutmeg. Pour the eggnog into tall glasses and cool it in the refrigerator. If you prefer bourbon or rum in your eggnog, you may add when the eggnog has cooled.
  4. A few minutes before serving, beat the egg white to soft peak stage. Then add 1 tsp regular sugar & few drops of vanilla essence and continue to beat to stiff peak stage. Do not beat beyond this stage as the egg white foam will split. Spoon this egg white foam on top of your cooled eggnog and serve.
